Ingredients
  

  • ½ cup Quinoa, cooked
  • 1 Carrot, sliced into thin matchsticks
  • ½ Cucumber, sliced into rounds
  • 6 oz Kale de-stemmed, chopped
  • 1 can Chickpeas, rinsed and drained
  • ½ tsp Garlic
  • ½ tsp Paprika
  • 2 tbsp Olve oil

Dressing

  • 2 tbsp Tahini paste
  • 2 tbsp Lemon juice
  • 1 tbsp Honey or maple syrup
  • 2 tbsp Water more if needed
  • ½ tsp Sesame oil optional

Pickled Red Onions

  • ½ Red onion, very thinly sliced
  • ½ cup Water
  • ½ cup Distilled white vinegar
  • 2 tsp Sugar or honey
  • ¼ tsp Salt

Instructions
 

  • Preheat the oven to 425°F.
    In a mason jar, combine red onion slices, vinegar, sugar, salt, and very hot water. Stir until the sugar and salt are dissolved. Set aside.
    Cook the quinoa according to the package's instructions.
  • Add chickpeas, 1 tbsp olive oil, garlic, and paprika to a bowl and toss to combine. Add chickpeas to a sheet pan or casserole dish and cook in the oven for 30 minutes, tossing halfway through.
  • Place the kale in a large bowl and add the remaining 1 tbsp of olive oil. Use your hands to massage the kale with the oil. Optionally, you can lightly steam the kale in a pot with a steaming basket.
  • In a small mason jar, add all the dressing ingredients, cover, and shake vigorously. Set aside.
  • Assemble the Buddha bowl by adding everything to a bowl and drizzling with the creamy tahini sauce. Garnish with hemp seeds and chipped scallions.
