
Zucchini Noodles W. Chickpeas, Peas and Marinara Sauce

This recipe combines tender zucchini noodles with protein-rich chickpeas and sweet peas, all brought together with a savory marinara sauce.
Equipment
- 1 Knife
- 1 Cutting Board
- 1 Large sauté pan
- 1 Stirring spoon
Ingredients
- 2 Large zucchinis
- ½ Onion, small-diced
- ½ cup Chickpeas
- ½ cup Frozen Peas Defrosted
- 2 cups Marinara sauce
- 1 tbsp Garlic, minced
- 2 tbsp Avocado oil optionally you can use coconut oil or olive oil
- ¼ tsp Salt
- Pinch Black pepper
Instructions
- Heat oil in a large sauté pan over medium-high heat. When the pan is hot, add the onions and zucchini noodles and saute for 5 minutes, stirring occasionally, until the onions have softened and zoodles are lightly browned.
- Add in the minced garlic, chickpeas, peas and salt/pepper and cook for 1-2 additional minutes.
